迷恋奶酪---酸奶芝士蛋糕

  • 奶油奶酪40克
  • 原味酸奶60毫升
  • 黄油23克
  • 鸡蛋2个
  • 低筋面粉27克
  • 玉米淀粉14克
  • 柠檬汁2至3滴
  • 细砂糖40克
  • 淡奶油150克
  • 砂糖15克

Steps to make 迷恋奶酪---酸奶芝士蛋糕

  • 1.活底蛋糕模用锡纸包住底部,内部垫油纸。
  • 2.蛋黄、蛋白分离。
  • 3.奶油奶酪加入酸奶隔水加热法熔化,搅拌至无颗粒状。
  • 4.分次加入蛋黄搅拌均匀。
  • 5.筛入混合的低粉、玉米粉。
  • 6.加入熔化的黄油液搅拌均匀。
  • 7.蛋白加入几滴柠檬汁,低速打至粗泡;分三次加入27克细砂糖,中速打发。
  • 8.打至湿性发泡。
  • 9.取1/3蛋白加入蛋黄面糊中切拌均匀。
  • 10.再倒回蛋白中,快速切拌均匀。
  • 11.将面糊倒入模具中,在桌上轻震几下排出里面的气泡。
  • 12.模具放入平底烤盘中,注入温水高度约模型的3/4左右,放进烤箱170°烤约20-30分钟,转至150度40分钟。
  • 13.出炉,待其冷却后脱模、撕除油纸。
  • 14.淡奶油加入细砂糖中速打至7成发,在蛋糕表面倒入满满的打发奶油,抹出自然花纹;侧面用抹刀轻压,做出宽条花纹。
  • 15.蛋糕上用草莓、蓝莓等水果和薄荷叶装饰即可。
