南瓜戚风蛋糕

  • 南瓜泥60克
  • 鸡蛋清4个
  • 细砂糖45克(打发蛋白用)
  • 食用盐1g
  • 柠檬汁1小勺

Steps to make 南瓜戚风蛋糕

  • 1.称量好所需材料,备用;
  • 2.把4个鸡蛋用两个无油无水玻璃碗分离;
  • 3.60克熟南瓜在碗中搅碎,加入A材料中的玉米油,牛奶,细砂糖搅拌均匀
  • 4.筛入低筋面粉并搅拌均匀;
  • 5.加入4个蛋黄;
  • 6.搅拌成均匀的蛋黄糊,放着备用;
  • 7.鸡蛋清里加入食用盐和挤入3-5滴柠檬汁;
  • 8.用电动打蛋器搅打,分两次加入细砂糖,打发至干性发泡状态即可;
  • 9.取三分之一的蛋白到蛋黄糊中搅拌均匀;
  • 10.第9步骤的蛋黄糊倒回蛋白中,搅拌均匀;
  • 11.倒入蛋糕模具中,抹平,轻微敲震蛋糕模排出蛋糕糊中的大气泡;
  • 12.放入提前135度预热5分钟的烤箱中的中层,上下火烘烤45分钟,表面金黄色、用牙签插入蛋糕内部拔出,无粘物即可!
  • 13.取出烤好的蛋糕倒扣在烤网上晾凉即可脱模!
