糖醋菊花鱼

Steps to make 糖醋菊花鱼

  • 1.草鱼洗净,擦干水份,贴着鱼骨片下鱼肉,再把肉上的大刺去掉,留下两片净鱼肉。
  • 2.将鱼肉鱼皮朝下放到案板上,用刀切成5个薄片,第5刀再切断,下面的鱼皮要连着。
  • 3.然后再垂直切花刀,鱼皮仍不要切断。
  • 4.用清水漂洗两遍。
  • 5.加上料酒、葱姜丝、盐、糖腌制20分钟。
  • 6.均匀地裹上一层玉米淀粉,抖去多余的。
  • 7.大一点可以用牙签固定一下形状。
  • 8.锅中加适量油,五成油温时下入鱼肉炸至定型,油温升至七成热时再复炸一次。
  • 9.捞出沥净油摆在芹菜叶上。
  • 10.取碗一个,放入一勺香醋、二勺蕃茄酱、三勺白糖,四勺水混合均匀。(我用的香醋,也可以用白醋或米醋,颜色会更亮一些。)
  • 11.玉米淀粉加水混合成水淀粉。
  • 12.另起油锅,加入少许底油,倒入碗汁,烧开后勾入适量水淀粉。
  • 13.把做好的汁浇在炸好的鱼上即可。
