台式卤肉饭

  • 后腿肉500g
  • 大朵香菇9-10朵
  • 鸡蛋8个
  • 西兰花少量

Steps to make 台式卤肉饭

  • 1.后腿肉洗干净放入锅中,加入适量水,加热;
  • 2.待水快开的时候去掉肉沫,待水开后再煮几分钟,等肉熟即可;
  • 3.将肉从锅中取出,切成大概0.7*3cm的小块;(切好小块肉忘记拍照了可以参照后面图中小肉块)
  • 4.将干香菇放入开水中泡软后,切成0.6*1cm左右小块待用;(泡发过程中可以用盆子底部压在碗上面,不用反过来扣着避免盆子滑落)
  • 5.香菇水留着待用,去掉沉淀;
  • 6.1)将鸡蛋放入锅中,加入冷水没过鸡蛋,加热煮开后,再煮五分钟,倒掉热水,加入冷水放凉(可以多换几次冷水);2)将鸡蛋壳剥掉待用;
  • 7.1)将葱白切成段;2)姜切成丝;3)大蒜切成蒜末;4)锅中加入适量的油,加热,放入姜葱蒜,爆香;
  • 8.待姜葱蒜爆炒至有点金黄色(如图)
  • 9.加入洋葱块进行爆炒,翻炒半分钟;(洋葱块尺寸约为:1*1cm)
  • 10.加入小肉块,爆炒一分钟,微微金黄;
  • 11.加入香菇丁,爆炒半分钟左右;
  • 12.加入适量生抽,少量老抽翻炒半分钟左右,加入适量水没过食材煮开;
  • 13.加入去壳鸡蛋,水差不过没到鸡蛋,调一下味道和水量,大火煮20分钟后转中火煮20分钟,鸡蛋不断翻面,保证味道均匀;
  • 14.小火煮一个小时;
  • 15.肉软而不烂,特别入味!
  • 16.撒上葱花,美美的卤蛋肉燥~(喝粥下饭特别美味)
  • 17.台式卤肉饭完成~(西兰花过水放少许盐,卤蛋对切块)
