清爽柠檬挞
这款挞因加入了柠檬汁,酸酸甜甜的,比较清爽不腻,很值得一试哦。挞水的量约4寸的挞两个,挞皮有余。

  • 黄油(挞皮)70克
  • 低筋粉(挞皮)105克
  • 蛋黄(挞皮)4克
  • 水(挞皮)18ml
  • 砂糖(挞皮)2克
  • 盐(挞皮)1克
  • 细砂糖(挞水)35克
  • 鸡蛋(挞水)60克
  • 鲜柠檬汁(挞水)20克
  • 淡奶油(挞水)36克
  • 柠檬屑(挞水)少许
  • 玉米淀粉(挞水)8克

Steps to make 清爽柠檬挞

  • 1.各原料备用,黄油软化。
  • 2.鸡蛋黄和水搅拌均匀后加入糖和盐搅拌后放进冰箱待用。
  • 3.软化的黄油用刮刀拌到顺滑。
  • 4.倒入过筛后的低粉。
  • 5.用刮刀像切一样的感觉拌面,不要拌过头,拌成如图碎碎的颗粒状,基本无干粉。
  • 6.拿出冷藏的蛋液倒入面粉颗粒中。
  • 7.搅拌至水分充分被面糊吸收,不要过度搅拌,以免起筋。
  • 8.放到保鲜膜里成型,放冰箱冷冻一个晚上。要用部分可以先冷藏,暂时不用的冷冻。
  • 9.冷藏或冷冻过的塔皮回温到可以擀至塔皮,擀到约3mm厚。(最好放在两张保鲜膜中间擀,不会粘到其它工具上。)
  • 10.拿去底下的保鲜膜,把塔皮盖在塔模上,用手把塔皮按贴到模四周。用面杖压一下。
  • 11.拿掉多余的塔皮。
  • 12.用叉子在底下叉一些小洞。成型好的塔皮冷冻2小时以上。取出后,压上小烘焙用石或其它重物如红豆。烤箱中下层,上火165度下火145度,烤15分钟取出备用。
  • 13.鸡蛋与糖混合,搅拌到糖化。
  • 14.加入事先挤好的柠檬汁、淡奶油打匀。
  • 15.筛入玉米淀粉拌匀。
  • 16.将挞水倒入挞皮,可以撒一点柠檬屑在上面,烤箱中下层,上火170度,下火140度烤40分钟,取出脱模即可。
