【徽菜】:葛粉圆子
葛粉圆子是徽州人传承了近千年的一道美食。而且集徽州原生态物产之大成,不仅口感好,还营养丰富。

徽州山区盛产葛根,性凉味甜。葛根榨洗出粉名葛粉,又名山粉,徽州民间常用以制作点心类食品。

    Steps to make 【徽菜】:葛粉圆子

    • 1.将五花肉去皮切碎,用刀剁成米粒大小的馅。
    • 2.泡发的茶树菇攥干水分、豆干、腊肉切成细碎丁备用。
    • 3.葛粉用冷水搅拌成糊状待用。
    • 4.锅置火上,倒入五花肉丁、豆干丁、树菇丁、腊肉丁,加高汤、盐、鸡粉、姜末、白糖拌匀,中火不停翻炒,翻炒的同时淋入适量的食用油。
    • 5.将葛粉糊徐徐倒入馅料中。
    • 6.翻炒至熟透,起锅。
    • 7.炒至葛粉呈透明状起锅,趁热搓成圆子,再滚上一层葛粉。
    • 8.将做好的葛粉圆子入笼上蒸锅蒸制8分钟。
    • 9.撒上香葱,盖盖子虚蒸1-2分钟即可上桌食用。
