美国人喜欢布法罗鸡翅,但最原始的西方很难找得到,也没必要太较真,笔者也曾经去过专买鸡翅的餐厅吃过,感觉死咸死咸的,到了自己做,除保持最基本的原料TEXAS PETE HOT SAUCE外,自己找了一些配料,效果不错,也不用计较是否正宗了。

  • 喼汁1/2大勺
  • 精盐1/3小勺
  • 胡椒粉1/4小勺
  • 白酒1大勺
  • 玉米淀粉1大勺
  • 低筋面粉1大勺
  • 蒜头5粒
  • 茄汁2大勺
  • 喼汁1/2大勺
  • 柠檬汁1/2大勺
  • 黄芥末或酱,1/2大勺
  • 红椒粉1/2大勺
  • 精盐1/3小勺
  • 白糖2+1/2大勺
  • 鱼露1小勺
  • TEXAS PETE辣椒酱1大勺
  • 清水1/2杯
  • 生粉1/2大勺

Steps to make 家庭版布法罗鸡翅(Buffalo Wings)

  • 1.TEXAS PETE Hot Sauce,布法罗鸡翅的重要调料。
  • 2.把鸡翅腌制,放鸡翅6只、喼汁1/2大勺、精盐1/3小勺、胡椒粉1/4小勺、白酒1大勺抓腌均匀,静置30分钟或过夜,过夜就想对入味了。
  • 3.到了要烹调时,放玉米淀粉1大勺、低筋面粉1大勺,再抓均匀。
  • 4.升中火,扁平不粘锅热放菜油约1/2杯,平铺放下鸡翅,表面朝下,煎至金黄色,翻转至底朝下。
  • 5.也煎至金黄色,翻给大家看。
  • 6.把蒜头约5粒剁成细末。
  • 7.用一碗,放茄汁2大勺、喼汁1/2大勺、柠檬汁1/2大勺、黄芥末1/2大勺、红椒粉1/2大勺、精盐1/3小勺、白糖2+1/2大勺、鱼露1小勺、TEXAS PETE辣椒酱1大勺、清水1/2杯、生粉1/2大勺,放入蒜末,搅拌均匀成锅汁,试味,感觉可以了。
  • 8.把汁倒入一个稍大的锅,大火把锅汁烧至起大泡,有“汽顶勺”的感觉,收火。
  • 9.倒入鸡翅,翻匀即可。Enjoy !
