【四物猪蹄】--- 秋冬滋补的大肉
四物汤,由当归、川芎、白芍、熟地黄四味中药组成,是以补血调血为主要功用的方剂,被誉为「一切血病的总方」、「肝经调血之专剂」。
其中熟地黄以补血为主,具有补肾填精的作用;当归补血、活血,补阴中之阳,川芎入血分理血中之气;芍药敛阴养血,川芎和芍药能缓解血管经挛,增加动脉供血。秋末冬初都是进补的好时节,炖鸡鸭、炖排骨或是炖猪蹄等加入一个温补的四物包,不仅能补血,也能促进健康。
如果对这些药理不怎么了解的情况下,有一个最方便也最安全的办法,那就是到中药店找中医开,那样还可以依据个人的体质来调配,从而起到更好的效果。

  • 食盐1.5茶勺
  • 料酒1汤勺
  • 红烧汁1/3汤勺

Steps to make 【四物猪蹄】--- 秋冬滋补的大肉

  • 1.猪蹄洗干净砍成大块。(我这个烤了猪皮)
  • 2.锅中加入适量水,下入猪蹄,和1个葱结、几片生姜,烧开后调入1汤勺料酒,再次煮开,给猪蹄焯一下水。
  • 3.捞出猪蹄用温水冲洗干净。
  • 4.锅中加入适量油,放入适量白糖,炒出糖色。
  • 5.倒入竹蹄翻炒上色后调入1/3汤勺的红烧汁。
  • 6.翻炒均匀后,加入适量开水没过猪蹄,大火烧开。
  • 7.烧开后倒入砂锅中。
  • 8.放入四物包,置于肉中心。
  • 9.盖上盖子大火烧开转小火慢褒2个小时。
  • 10.调入食盐,大火收一下汁至稍微浓绸的状态即可。
