儿时的味道:滚元宵
我记得在计划经济时代,我最喜爱看的就是在快到正月十五的时候,喜爱去我们那个时代的国营商场。去看国营商场里穿了商业白大褂的食品组的阿姨们在一个竹制的大菠萝里滚汤圆的工作。那时的汤圆馅是芝麻花生馅的,汤圆粉是半干半湿的样子。阿姨们先是将黑色的汤圆芯子在半干半湿的汤圆粉里滚。为了求得汤圆的圆润,就把滚成雪球状的汤圆一个个捡到干净的菠萝中进行筛动。这样,一枚枚圆润如雪球的汤圆被过秤的阿姨秤好,用牛皮纸包装好递给我。如今,一年一度的元宵节随着我的年龄增长年复一年的来临。某日,从一个美食帖子中我看到了滚汤圆的操作,就一下子唤起了儿时的味道。太亲切了!

Steps to make 儿时的味道:滚元宵

  • 1.熟花生剥去皮。
  • 2.黑芝麻小火炒熟后同白砂糖、熟花生放入粉碎机中粉碎。
  • 3.准备事先已熬好的猪油。
  • 4.猪油在微波炉中叮一下使之化开,倒入芝麻馅中搅拌均匀,按需要分成20个人剂子。
  • 5.用28×28的金属烤盘放入汤圆粉,淋入一定的清水,和成半干半湿的汤圆粉。
  • 6.在烤盘一侧放一碗清水,将芝麻馅心在半干半湿的汤圆粉中打滚。每滚一次就在碗中蘸一次水,再在汤圆粉中打滚,直至滚成你个人需要的大小。
  • 7.滚成雪球的汤圆。
  • 8.成品图。
  • 9.为了能在元宵节的早上吃,我用冷冻板将自制的汤圆冷冻成形。
