  • 1.食材集合。
  • 2.鸡肉斩块将鸡肺清理干净,清水浸泡30分钟去除血水,中途揉搓清洗换水。
  • 3.沥干水分。
  • 4.准备辅料:香菜切段;香芹切段;辣椒切圈;姜切片;干葱切块。
  • 5.准备碗汁:柱侯酱1.5汤匙,味极鲜2汤匙,广东米酒2汤匙,蚝油1汤匙,老抽半汤匙,白砂糖1克,搅拌均匀备用。
  • 6.炒锅入油,爆香姜片,炒出姜的香气。
  • 7.入鸡块翻炒,加入1克盐翻炒至鸡块水块收尽。
  • 8.干香金黄,倒入碗汁翻炒均匀。
  • 9.加盖锅盖焖2分钟离火备用。
  • 10.砂锅烧热,入蒜仔、干葱煸香。
  • 11.倒入香芹,再加入大半汤匙柱侯酱大火翻炒均匀。
  • 12.倒入鸡块,不翻动,盖上砂锅盖中火焖5分钟。
  • 13.打开锅盖翻动,搅拌均匀,大火烧2分钟。
  • 14.放入红椒圈和香菜段,翻炒均匀,盖上锅盖焖10秒关火即可食用。
