可可螺旋卷

  • 低粉50克
  • 细砂糖20克

  • 细砂糖45克
  • 蛋黄1个
  • 低粉15克
  • 玉米淀粉10克
  • 黄油10克
  • 无糖可可粉2小匙

Steps to make 可可螺旋卷

  • 1.后油法,将原料放入面包机中搅成可拉出稍具透明薄膜状的面团。
  • 2.放入容器内盖上盖发酵至2--2.5倍大。
  • 3.可可卡士达酱:牛奶加细砂糖及蛋黄用打蛋器搅匀。
  • 4.加入低粉和玉米淀粉用小火边煮边搅至浓稠状。
  • 5.再加入黄油和可可粉快速搅匀,取出,包上保鲜膜冷藏备用。
  • 6.将发酵好的面团等分成5份,滚圆后盖上保鲜膜,松弛约10分钟。
  • 7.将面团整形成长约45厘米的长条形。
  • 8.卷在螺管上放入烤盘,于温暖湿润处进行二次发酵。(卷时头尾处要粘贴紧,烘烤时才不会散开。)
  • 9.发酵好的面团均匀地刷上一层蛋液。(应注意,卷时应该从距离螺管尖头约2厘米处开始卷,发酵、烘烤时面团才不易脱离模具。看图,我就卷得往下了。)
  • 10.烤箱预热,上下火175度,烘烤约15分钟。
  • 11.面包放凉后,将可可卡士达酱装入裱花袋中,挤在面包内部即可。
