法式薄饼面包
在这么重油的面包上抹油撒糖,想着就不禁心惊肉跳。会不会太甜?是不是太油?最重要的是,热量有多高?不过,毫无疑问,原本没多少甜味的奶油慕斯面包经过这么一折腾,必然更加香甜。
一直都认为,书中只说将面包片放入糖浆中略微浸泡,而略微是怎么个略微法,有些语焉不详。真到动手的时候,就知道,略微,就是将表面沾湿,即可立即拿起。所谓的浸泡,一定不是让面包片潜入糖浆,而只是每面蘸一下糖浆而已。因为面包片会很快吸饱糖浆,变软掉。
看起来还不错,浓郁的黄油味道。。。

  • 杏仁粉10克
  • 白兰地1/2小勺
  • 奶油慕斯面包3个

  • 1.杏仁奶油料
  • 2.将黄油搅打松软,加入白砂糖
  • 3.搅拌至颜色发白
  • 4.分次加入蛋液
  • 5.搅打均匀
  • 6.加入杏仁粉,拌匀
  • 7.加入白兰地
  • 8.搅拌均匀,备用
  • 9.糖浆料
  • 10.将白糖和水倒入锅中
  • 11.加热至白糖溶化并沸腾,离火,备用
  • 12.奶油慕斯面包与装饰料
  • 13.将面包横剖成1.5厘米厚的片
  • 14.将两面放入糖浆略微浸泡
  • 15.放入烤盘
  • 16.放入烤箱,上火220度,烘烤5分钟
  • 17.出炉稍凉,将未烤的一面向上,放适量杏仁奶油
  • 18.抹匀
  • 19.放少许杏仁片
  • 20.筛上糖粉
  • 21.放入烤箱,中层,上下火220度,烤7-15分钟
