冷藏都不开裂的柔软春饼
立春是吃春饼的日子,现在有说法二月二也是吃春饼的日子,也许各地风俗不同,在北方二月二是吃焖子的。其实,想吃啥时候都能吃。记得小时候家里常吃春饼,炒上几个小菜,饼里抹上面酱,夹上小菜、葱丝、黄瓜条,跟烤鸭的吃法差不多。妈妈总是烙好了饼,放到一个热锅里,用蒸汽噓着,随吃随取。
现在我终于会自己做春饼了,没想到做出的饼冰箱冷藏一夜都不会开裂,照样可以卷成卷。春饼有蒸的和烙的两种做法,我还是偏爱烙的饼,喜欢看上面微黄浅咖,美美的,感觉这才像饼。

Steps to make 冷藏都不开裂的柔软春饼

  • 1.开水倒入面粉,边倒边用筷子搅拌成絮状。开水要慢慢加入,不要一次性加入啊
  • 2.面稍凉不烫手时,揉成光滑的面团,加盖饧面30分钟
  • 3.平均分成约25-30克左右的剂子,剂子个数要成对
  • 4.取一个剂子,表面滴一滴玉米油
  • 5.把另一个剂子盖在上面,转动一下,按扁
  • 6.擀成圆圆的薄饼
  • 7.平底锅小火,放入饼,起泡后翻面
  • 8.看到翻过的面表面有淡淡的黄咖,另一面也起泡后,就熟了。依次做好所有的,放在有盖的容器里保存
  • 9.吃的时候从中间撕开,取一张小饼,抹上面酱,夹些韭菜鸡蛋、炒绿豆菜、炒粉丝、炒面筋丝、葱丝、黄瓜条等,卷起,美味!
  • 10.成品,冰箱冷藏一夜再卷都不会开裂
