Steps to make 菠萝古老肉

  • 1.菠萝对半切开
  • 2.菠萝切块,肉切块。肉切块,用葱姜泡水腌制肉,肉里放少许盐,大约10分钟
  • 3.锅里烧开水,焯菠萝
  • 4.炒好菠萝备用,准备黄瓜片和干辣椒(最好用彩椒,颜色漂亮)
  • 5.鸡蛋打散,淀粉放碗中备用。先将肉蘸上蛋液,再蘸淀粉,最后放盘中备用
  • 6.大火将锅烧热,加多油,八成油温(油温一定要高)将肉放入炸(分次下肉)
  • 7.炸好一遍再从新炸一遍(复炸)捞出控油
  • 8.锅里少许油,下番茄酱翻炒
  • 9.下白糖、醋、盐(此时自己尝一下酸甜度,灵活掌握糖醋用量)
  • 10.下肉,此时快速翻炒
  • 11.下菠萝
  • 12.下辣椒和黄瓜片
  • 13.翻炒出锅,淋明油(就是熟油,做出的菜特别漂亮)
