  • 1.食材。鱼头让店家帮忙从中切开不断。
  • 2.把鱼头洗净,肚内黑膜去除。用盐、料酒、生抽、胡椒粉、姜片、鸡精、豆豉腌制半小时入味。
  • 3.姜、蒜、葱一半切末,一半切片。
  • 4.热锅凉油,下入姜末、一半的蒜末炒香。
  • 5.下入剁椒和老干妈豆豉炒出香味备用。
  • 6.盘中摆好姜片、蒜片、葱段。
  • 7.把腌制好的鱼头摆好,均匀地铺上炒香的剁椒。
  • 8.蒸锅水开后上锅蒸15分钟。(视鱼头大小)
  • 9.把剩下的一半蒜末、葱花铺在蒸好的鱼头上。
  • 10.锅里烧热油。
  • 11.淋在鱼头上即可。
