  • 牛里脊肉200克

  • 姜粉少许
  • 高汤(或水)适量
  • 生抽少许
  • 辣椒油(红油)1大勺
  • 花椒油1勺

Steps to make 水煮牛肉

  • 1.将牛里脊肉切片,注意切的方向和厚度。切好后用刀背拍一下,让纤维松散一些。(不拍也可以)
  • 2.将鸡粉、料酒、淀粉调匀,将肉片抓匀腌制一会儿。
  • 3.豆芽洗净,沥净水分。小油菜洗净,掰段
  • 4.将豆芽和小油菜焯一下水,放入碗底备用。
  • 5. 腌制好的牛肉滑一下热油,捞出备用。这样能缩短煮的时间,肉片更嫩一些。
  • 6.热锅热油,炒香郫县辣酱,将葱白、姜粉、高汤(或水)、生抽、料酒、盐放入调匀。高汤的多少要根据最后盛入的碗的大小决定。
  • 7.将肉片倒入稍煮一下。
  • 8.连汤带肉片一起倒入之前铺好豆芽和小油菜的大碗中。
  • 9.表面撒少许葱花,干辣椒,将烧热的辣椒油和麻油浇在上面即可。
