土鸡焖花卷——新疆味道
新疆大盘鸡分两个类型:一个是沙湾的土豆青椒炖土鸡配皮带面,最近新疆流行的小土鸡焖花卷有点改良的意思,很多内地的朋友可能还没有听过。 沙湾大盘鸡成形于90年,成熟于92年。96年在新疆达到鼎盛。传到内地是以后的事了。

另一个就是柴窝堡大盘鸡,主菜很有典型的四川干煸鸡味道。数量巨大的红色干椒使整个盘子都呈现暗红色。鸡块经过干煸,味道焦而不糊,吃起来口感非常爽。最后主食配新疆花卷,其实就是是典型的西北吃法了。
新疆大盘鸡是不配米饭吃的,否则就失了味道。大盘鸡是要几个朋友一起吃,否则失了气氛。新疆人的豪爽和无私基本是在这口味浓重,共吃共饮的过程中被诠释得淋漓尽致。新疆人特豪爽做菜都喜欢用大盘装,大盘鸡就是最具有代表性的。98年塔城有大盘鱼引食客无数,90CM的盘子更是让内地朋友惊得目瞪口呆。味道就不用说了,吃了才知道,反正是被抢光了,就连汤汁都没有。这几年新疆的各种大盘菜和大锅抓饭等等出现了更多,有的已经打破了吉尼斯记录。

    Steps to make 土鸡焖花卷——新疆味道

    • 1.材料:新鲜土鸡 油 盐 干红辣椒 草果 姜 大葱 八角 花椒粒 胡椒粒 白糖 豆瓣酱 大蒜 青辣椒
    • 2.土鸡洗净切块
    • 3.过水去掉血沫,捞出沥干水分
    • 4.大葱洗净切段,大蒜去皮,干红辣椒泡泡洗净,姜切片,青辣椒切片
    • 5.热锅凉油,加白糖炒出泡泡
    • 6.加鸡块,翻炒均匀,
    • 7.放入豆瓣酱 翻炒
    • 8.加干红辣椒花椒,胡椒粒 姜 大蒜,八角 草果,八角,
    • 9.加入水(刚好能盖住鸡)大火烧开
    • 10.加盖转小火慢慢炖1小时以上,直到鸡肉熟透
    • 11.加大葱青辣椒片
    • 12.翻炒均匀,尝味出锅
    • 13.将花卷切成长4厘米大小的块
    • 14.过油炸黄
    • 15.摆在盘子一圈,倒入土鸡就好了
