泡芙糊用料:低筋面粉80g、水160g、黄油80g、细糖5g、鸡蛋3个
菠萝皮用料:黄油60g、细糖40g、低筋面粉55g、

Steps to make 德普烤箱食谱—酥皮菠萝泡芙

  • 1.酥皮原料
  • 2.泡芙原料
  • 3.先制作菠萝酥皮。将黄油细糖软化打发,加入面粉混合均匀,整好形放入冰箱冷冻20分钟。
  • 4.然后制作泡芙:将面粉提前过筛,将鸡蛋准备好;水、黄油一起在火上煮沸,使之没有漂浮的油;
  • 5.加入过筛后的面粉,手动快速搅拌至无颗粒,持续加热并快速搅拌,至锅底有一层薄薄的膜,关火;将烫好的面糊倒致搅拌缸内,中速搅拌至60度;
  • 6.将鸡蛋逐个加入,并快速搅拌均匀,使面糊向上拔起成倒三角并级慢速下流即可;将制作好的面糊装进裱花袋,挤制在铺有油布的烤盘内成型;
  • 7.将冻好的菠萝皮切成薄片,盖在泡芙上;
  • 8.将制作好的酥皮泡芙整齐放入烤盘再放进德普电烤箱,焙烤档,195度 焙烤20min左右。待泡芙冷却后注入细化的馅料即可。
