    Steps to make 虾仁黄金卷

    • 1.原料图。猪肉切末(肥瘦比例约为2:8)取4-6根葱条。
    • 2.虾仁不用切太碎切小丁,蛋打好。
    • 3.猪肉末中加适量盐、胡椒粉、生抽、料酒和一点点糖拌匀。
    • 4.把葱姜水倒入猪肉末(不要加太多,图中的葱姜水我只用了一点),朝一个方向搅打上劲。
    • 5.加入虾仁丁。

    • 7.平底锅擦一层薄油,锅热后用小火,把1/2的蛋液倒入,晃动锅使其厚薄均匀,边上翘起后,翻面把另一面也稍煎一下。
    • 8.取出蛋片平铺在案板上,取一半的肉馅均匀地铺满蛋片。
    • 9.卷好后,用在开水里捞过的葱条打结。
    • 10.蒸笼上刷一层油,把蛋卷放入,水开后再蒸7-10分钟。
    • 11.蒸好的蛋卷取出稍凉后,切片装盘。可原味吃,也可用味极鲜、醋、生姜、大蒜、香油调成汁蘸着吃。
