Steps to make 扬州炒饭

  • 1.虾去头去尾,在背部切一刀不切断,去虾线洗净控干。用料酒、少许盐、淀粉抓匀腌制片刻。
  • 2.胡萝卜、豌豆、玉米粒分别用开水焯烫1分钟,捞出控干。火腿切小丁,鸡蛋打散。
  • 3.锅中倒油,烧至八成熟时放入虾仁,翻炒虾仁变为白色,捞出备用。
  • 4.热锅冷油,倒入打散的鸡蛋液,迅速将蛋液炒散。
  • 5.倒入米饭翻炒均匀。
  • 6.再放入焯好的豌豆、玉米粒、胡萝卜及火腿丁,加入盐、生抽,用中火不停翻炒。
  • 7.等到锅中米饭在锅里有跳动时加入炒好的虾仁,撒上葱花,翻炒均匀。
  • 8.出锅装盘。
