月饼之战终于拉开序幕了。其实自己认为还不着急的,原料还没有准备充分。耐不住有人要动手了。那就做吧。原是想自己做咸蛋黄的,没想到有人买了现成的。

  • 莲蓉馅650克
  • 咸蛋黄9.5个
  • 蛋黄1个
  • 蛋白1大勺

  • 1.准备面团料
  • 2.将转化糖浆倒入大碗,加入枧水
  • 3.搅拌均匀
  • 4.倒入油
  • 5.搅拌均匀
  • 6.加入面粉和奶粉
  • 7.调成软硬适度的面团
  • 8.静置1小时
  • 9.准备馅料和表面装饰用蛋液
  • 10.取一个蛋黄切成两半
  • 11.取34克莲蓉,也分成两半
  • 12.分别按扁
  • 13.在其中一片上放半个蛋黄
  • 14.盖上另一个莲蓉片
  • 15.搓圆,成馅料
  • 16.把所有馅料做好
  • 17.把面团分割成10克一个的剂子,搓圆
  • 18.取一个面剂,按扁
  • 19.放入莲蓉蛋黄馅
  • 20.将面皮向上一点点推起
  • 21.准备收口
  • 22.搓圆
  • 23.在月饼模具中装入少量面粉,摇晃均匀,倒出
  • 24.放入做好的月饼坯子
  • 25.扣在案台上,压实
  • 26.轻轻推出,就做好了一个月饼
  • 27.将做好的月饼放入烤盘,找好距离,表面喷水
  • 28.取出,表面刷蛋液,再放回烤箱继续烤约15-20分钟
  • 29.表面金黄,出炉
