Steps to make 鲜虾肠粉

  • 1.准备好食材
  • 2.水磨粘米粉、小麦淀粉、少量盐拌匀,加入混合粉1.2倍的清水,完全搅拌至没有颗粒的米浆
  • 3.虾去头去壳去虾线,切成小粒,用盐、生抽、料酒、胡椒粉搅拌均匀腌制20分钟,葱切末备用
  • 4.蒜、葱切末,用二汤匙生抽、二汤匙蚝油、一汤匙料酒、二汤匙水淀粉调成调味汁
  • 5.热锅凉油,加入蒜粒、葱白煸炒至微黄出香味
  • 6.倒入调好的调味汁煮至浓稠盛起作肠粉蘸汁
  • 7.披萨盘内倒入一勺米浆
  • 8.蒸锅烧开水,放入装好米浆的披萨盘蒸制
  • 9.三分钟后取出放凉水中浸泡
  • 10.揭下米粉
  • 11.在蒸好的米粉上辅上虾仁和葱花
  • 12.再放进蒸锅中蒸二分钟
  • 13.将蒸好的虾仁肠粉取出,卷成卷,切小段装盘
