肉松海苔蛋糕卷

  • 低筋面粉40g

  • 蛋黄酱3大勺

Steps to make 肉松海苔蛋糕卷

  • 1.将蛋黄中加入20g细砂糖,用打蛋器打至粘稠发白,体积略膨胀的程度。
  • 2.将50g白砂糖分3次加入蛋白中,用打蛋器打到捞起蛋白时,蛋白能缓缓滴在盆中。
  • 3.把打好的蛋黄糊倒入蛋白糊中,用手动打蛋器搅拌均匀。
  • 4.将低筋面粉筛入,然后用橡皮刮刀从上往下翻拌均匀。
  • 5.将隔水融化的黄油倒入并快速和面糊翻拌均匀。
  • 6.将拌好的面糊倒入铺有烘焙纸的烤盘中,放入预热好的200度烤箱中,约10-12分钟,表面金黄即可。
  • 7.出炉后稍放凉一会,然后从烤盘中取出,倒扣过来,撕去烘焙纸。
  • 8.待蛋糕片恢复至常温时,在蛋糕片的背面抹上一层蛋黄酱,撒上肉松和海苔。
  • 9.将蛋糕片卷起,边卷边轻轻挤压蛋糕体定型。卷好后放入冰箱冷藏20分钟切块即可。
