香葱肉松面包
比起甜味面包,最喜欢咸鲜口味的肉松面包了!这次自己做了,真的很有成就感,连不喜欢面包的人,都上瘾了呢,偷着乐呵一下~

Details of ingredients

  • 高筋面粉315克
  • 黄油40克
  • 绵白糖40克
  • 2克
  • 牛奶170克
  • 鸡蛋1个,50克左右
  • 酵母4克
  • 小葱2棵
  • 黑芝麻3克

Steps to make 香葱肉松面包

  • 1.将上述面包材料,除酵母和面粉外,放入面包桶,搅拌均匀
  • 2.放入高筋面粉,再放酵母,开启和面揉面模式(一个循环约30分钟)
  • 3.20分钟左右面团光滑起来时候加入软化的黄油,继续揉面,一个程序结束后,再开启一个揉面程序,总计约60分钟
  • 4.面包机盖好盖子,关掉电源,室温发酵45分钟再取出排气,放入冰箱冷藏室低温发酵5个小时以上
  • 5.时间到,取出按压排气揉圆。
  • 6.再静止醒发15分钟。
  • 7.剪好与烤盘大小相当的硅油纸,铺在案板上,面团放上面,擀成长方形,铺满油纸,再取至烤盘中,放入烤箱,下面放一大碗65°左右的温开水,烤箱断电,关烤箱门发酵2小时
  • 8.约发酵至2倍厚度
  • 9.刷上一层全蛋液,均匀撒黑芝麻,小葱花,烤箱预热180°约5分钟
  • 10.放入烤箱中层,烤约12分钟,期间注意观察,上色就将上火调制150°左右,上色均匀,即可取出。
  • 11.稍晾凉,用面包刀切成小方块,甜味沙拉酱挤出,均匀淋至面包下层,再沾上厚厚的肉松,就可以享受美味啦!
