Steps to make 港式老婆饼

  • 1.小火炒熟糯米粉,冷却至凉;
  • 2.将糯米粉放进大碗,加入黄油和细砂糖;
  • 3.用手搓成粗玉米粉状,加入清水;
  • 4.揉成均匀的面团,即成馅心;
  • 5.使用前平均分成12份。
  • 6.混合油酥皮所有材料;
  • 7.揉成均匀光滑的面团;
  • 8.混合水油皮材料;
  • 9.搓揉成光滑的面团;
  • 10.水油皮平均分成12份;
  • 11.油酥皮平均分成12份;
  • 12.将水油皮按扁,包入一份油酥皮;
  • 13.收口捏紧;
  • 14.擀成约12cm的长舌状;
  • 15.自上而下卷起来;
  • 16.盖上保鲜膜,松弛15分钟;
  • 17.收口朝上,擀成长条状;
  • 18.自上而下卷起来;
  • 19.盖上保鲜膜再次松弛15分钟;
  • 20.将小卷收口和两端捏向中间;
  • 21.整成圆球状;
  • 22.收口朝上,擀成圆饼;
  • 23.包入一份馅心,并趁势用虎口收紧收口,一定要捏紧,否则烘烤时馅心会流出来;
  • 24.收口朝下,轻轻擀成圆饼;
  • 25.排入烤盘;
  • 26.刷上一层蛋黄液;
  • 27.烤箱预热200℃,放进饼胚,烤大约15——20分钟,至表面金黄。
