绿豆凉糕紫薯馅
夏日凉凉的绿豆糕,沙沙的,甜甜的,好吃*,此方50克的月饼模具一共做出成品19个,冷藏保质期3到5天!本方子是紫薯馅,大家爱吃什么馅料都可以做,比如,奶黄,抹茶,蔓越莓,或者豆沙都可以!

Steps to make 绿豆凉糕紫薯馅

  • 1.称量剥皮绿豆仁250克,清水浸泡24小时,这期间多换几次水。
  • 2.上锅垫上纱布蒸1小时20分,我是电蒸锅,蒸了1小时20分钟,如果是液化气不锈钢蒸锅上蒸大概60分钟能蒸好,何为熟?打开锅盖拿起一粒豆,一捏就是粉碎就是蒸好了!
  • 3.紫薯洗干净削皮后也上锅蒸好,这个比较好熟,所以先来料理紫薯馅!蒸好的紫薯放入容器内压成泥备用
  • 4.趁热倒入麦芽糖30克,淡奶油30克翻拌均匀(可用蜂蜜代替麦芽糖)
  • 5.黄油15克室温软化后倒入紫薯馅内,搅拌均匀
  • 6.平底锅小火烧热后倒入紫薯馅翻炒,炒出水分
  • 7.炒成如图那样能抱成团,不能太湿,拿出盖上湿布静置备用。
  • 8.蒸好的绿豆仁拿出放入干净的容器内,压成泥
  • 9.压好的的绿豆泥需要过筛,这步很重要,要有耐心,过筛的绿豆泥会入口即化,更好吃!
  • 10.这是过完筛的绿豆泥细腻很多
  • 11.平底锅放入黄油块,小火化开
  • 12.倒入绿豆泥,白砂糖30克,翻炒均匀
  • 13.倒入淡奶油50克翻炒均匀
  • 14.水份越来越少,继续翻炒,培养耐心
  • 15.快要成功了,加油
  • 16.这是炒好的绿豆泥,盛出备用
  • 17.紫薯泥称量15克一个揉成小球
  • 18.全部的紫薯泥做成15克小球备用
  • 19.绿豆泥32克一个,做成皮,把紫薯球包进去,收口
  • 20.收好口,滚圆
  • 21.放进月饼模具压下去,神奇一刻诞生了,一颗完美的绿豆糕就在亲爱的们玉手下诞生了!
  • 22.切开后颜值也是棒棒哒,好看又好吃,赶紧动手做起来吧!
