油泼面
“油泼面”是陕西的传统风味面食,又叫拉面、拽面、抻面、桢条面、香棍面等。
其做法也具特色。首先,面条不要擀太薄,切的稍宽点,面条在开水中煮熟后捞到碗里,将蒜末、葱花、辣椒面放到面条的最上面,再用烧的滚烫的菜籽油浇在调料上,顿时香气扑鼻,随后调入适量酱油和香醋,一碗香喷喷的油泼面便出炉了。

Steps to make 油泼面

  • 1.将面粉和盐放入盆里,倒水和面
  • 2.和成面团后盖上保鲜膜饧20分钟再揉,这样反复三次
  • 3.把揉好的面团分割成2份,盖上保鲜膜饧30分钟
  • 4.准备好蒜末、葱花及少许香菜
  • 5.把饧好的面团放在面板上,撒上面粉防粘
  • 6.把面团干成大的面片后(不要太薄),在面片的两面撒上面粉
  • 7.把面片像叠扇子一样,一层层叠起来,再用刀切成稍宽点的面条
  • 8.切好后,把面条打开
  • 9.锅中到油,开小火
  • 10.锅中倒入开水,水开后放入面条,开锅后煮2分钟捞出
  • 11.面条上面放上蒜末、葱花和辣椒面
  • 12.把油烧滚烫后浇在调料上,跟着倒入六月鲜酱油和醋
  • 13.拌匀后即可享用,放点香菜装饰哈
