素烧麦

Steps to make 素烧麦

  • 1.在面粉放入面包机桶内,逐次少量加入热水,启动和面程序,合成团
  • 2.盖好静置饧面20分钟
  • 3.饧面的同时,准备馅料。鸡蛋加盐打散,在不粘锅中小火炒成碎块
  • 4.将西葫芦丁、胡萝卜丁、青椒丁和鸡蛋碎倒在一起,加植物油、盐和生抽拌匀
  • 5.面团揉成光滑的长条,切成大小相当的剂子,压扁
  • 6.用擀面杖旋转着擀成中间稍厚,边缘很薄的圆片。因为面粉筋度高,面团很筋道,可以擀到半透明的程度也不会破
  • 7.用勺子将适量馅料放在面片中心
  • 8.左手托底,在右手捏褶的同时,慢慢转动,且用左手拇指将馅料不断向内压,这样可以包入更多馅料。右手用拇指食指不断将面片边缘均匀折叠,用剩余几指在边缘下方压实。距离边缘越远,花瓣越大,反之则越小
  • 9.完成后稍整理一下形状,大致如图的样子。烧麦是不封口的,这样馅料更容易熟透,且蒸汽会使其更滋润
  • 10.放入垫了屉布的笼屉里,或者金属笼屉也可以,上锅,冷水沸腾后蒸10分钟左右即可。因为是素馅,很容易熟透
  • 11.完成后取出即可食用。皮薄而Q弹,馅料饱满,很好吃
