酒酿(sweet ferment rice )旧时叫“醴”,是中国传统的特产酒。用蒸熟的江米(糯米)拌上酒酵(一种特殊的微生物酵母)发酵而成的一种甜米酒在我国全国各地称呼不同又叫醪糟、酒酿、米酒、甜酒、甜米酒、糯米酒、江米酒、酒糟。酒酿可以煮汤团~可以冲蛋~口感酸甜可口,老少皆宜。江南地区的人大抵都很喜欢。

Steps to make 酒酿

  • 1.取适量的糯米浸泡5小时以上
  • 2.以手指能碾碎为准。
  • 3.然后在锅里垫上干净的纱布,铺上糯米,大火蒸熟,差不多40分钟左右的样子。
  • 4.接着取出糯米晾干,一定要凉透!继续加入酒曲
  • 5.装入无水无油容器室温30℃密封36小时以上即可
  • 6.也可以用少量温水调开酒曲
