果味清香--香橙蛋糕卷

Steps to make 果味清香--香橙蛋糕卷

  • 1.甜橙抹盐搓洗干净切薄片,放入小锅加糖、水煮至橙皮透明。
  • 2.把橙片捞出,用厨房纸吸干水分,摆入铺油纸的烤盘,煮橙片糖水留用。
  • 3.蛋黄加入油、糖、奶,朗姆酒和煮橙片糖水拌至油水混合,筛入低粉拌至无颗粒。
  • 4.蛋白放入无水无油干净容器,加白醋、糖打至硬性发泡。
  • 5.取1/3蛋白糊与蛋黄糊搅拌均匀,再倒入2/3蛋白糊翻拌均匀。
  • 6.倒入烤盘,抹平,轻震,震出大泡,放入预热180℃烤箱烤20分钟。
  • 7.烤好蛋糕倒扣在烤网上,趁热撕去油纸,轻盖在蛋糕上晾凉,防止蛋糕干裂。
  • 8.烤蛋糕时把淡奶油加糖打至硬性放入冰箱备用,待蛋糕晾凉,打发好的淡奶油抹在蛋糕表面。
  • 9.用油纸把蛋糕卷好,放入冰箱20分钟冷藏定形。
  • 10.即可切片食用
