奶黄冰皮月饼
做奶黄包的时候还剩下些奶黄馅,就做了些冰皮月饼。做好的月饼洁白如玉,外皮软滑爽弹,内馅奶香十足,而且做法简单且无需烘烤,没有烤箱的同学可以试一试哦。

  • 糯米粉45克
  • 粘米粉35克
  • 澄粉20克
  • 玉米油18克
  • 牛奶185克
  • 糖粉50克
  • 奶黄馅300克

Steps to make 奶黄冰皮月饼

  • 1.将牛奶,玉米油,糖粉放在一个容器内拌匀。
  • 2.将粉类倒入另一个容器内拌匀。
  • 3.将液体原料倒入粉类原料混合均匀。
  • 4.过筛两遍
  • 5.静置半个小时。
  • 6.盖上保鲜膜,蒸锅上汽后蒸25分钟。
  • 7.蒸好的冰皮趁热搅拌均匀,放凉。
  • 8.冷却后的饼皮与奶黄馅等分成8份。一比一的比例,我用的75克的模具,大约每个37.5克。
  • 9.冰皮摁扁,包上奶黄馅,收严剂口
  • 10.月饼模里撒一些炒熟的糯米粉,晃一晃,然后将多余的粉倒出来。
  • 11.将包好的月饼放入模具内摁平。
  • 12.压出月饼形状,可以用小刷子轻轻刷去多余的糕粉。冰皮月饼就做好了。
  • 13.做好的冰皮月饼,放冰箱冷藏后再食用,口感最佳
