纯手工无添加,超级柔软的可可理石吐司

Details of ingredients

  • 高筋面粉300克
  • 酵母粉1茶匙+1/4茶匙
  • 60克
  • 牛奶195ML
  • 可可粉1茶匙+1/2茶匙
  • 低筋面粉75克
  • 1茶匙
  • 全蛋液75克
  • 黄油45克
  • 细砂糖1茶匙+1/2茶匙

Steps to make 大理石吐司

  • 1.除黄油以外的面团活成光滑面团
  • 2.加入黄油再揉,一直至面团呈扩展阶段,如图出现手套膜为止
  • 3.盆上面盖湿屉布放在温暖的地方发酵至两倍大
  • 4.将面团排气后,盖上保鲜膜室温下松驰15分钟后擀平
  • 5.先将可可粉均匀地筛在面片上,再将细砂糖筛在上面
  • 6.卷起面片,将收口朝下放入吐司模中进行二次发酵
  • 7.发酵至面团和模具差不多高,上面刷一层蛋液
  • 8.烤箱180度上下火烤35——40分钟,(中途面包上色后即在面包表面盖上锡纸,以防表皮过于发黑
  • 9.晾凉后,切片,(一定等待凉后切片,否则组织不整齐)
