Steps to make 黔味大虾

  • 1.大虾去掉泥肠,洗净,控干水分。
  • 2.葱切段,姜蒜切片,小红椒、花椒适量。
  • 3.锅内植物油烧热,放入大虾过油捞出。
  • 4.锅内余油放入小红椒、花椒炒出香味,下酱油、白糖、醋、味精。
  • 5.放入葱姜蒜炒出香味儿。
  • 6.再将虾下锅炒入味,勾入适量鸡汤翻炒,淋入红油、麻油即可。
  • 7.调料里去掉红油、醋、鸡汤,放稍多植物油,依次放小红椒花椒姜;蒜;虾;盐、味精、酱油、白糖;出锅前加葱丝---香辣虾 两者看着相似,味道还是大有差别的。这一款味咸鲜,黔味大虾偏麻辣鲜。
