戚风夹心蛋糕
上个月参加“秋.收 分享食物的美好活动”活动,很幸运得了金冠奖。看到自己的名字荣登榜上,真是兴奋不已!感谢美食天下给的参与和获奖的机会!感谢所有支持和鼓励我的亲们!昨天收到了活动奖品ACA智烤电烤箱,33L黄金容量,特别适合家庭使用。还有智能一键式菜单,只需选择按键,温度时间都由烤箱一键搞定,即使新手也可以轻松玩转烘焙烧烤等美食。收到后我是想先用一键式做了一个戚风蛋糕,效果真是不错,温控超准,我还担心蛋糕上面上色太重,烤了20分钟后加盖了锡纸,结果上面反倒上色太浅了,哈哈,还是交给烤箱最省事儿,而且效果也是最好的。

  • 鸡蛋6个
  • 白糖70g
  • 葡萄籽油40g
  • 酸奶70g
  • 低筋粉120g
  • 柠檬汁1/2小勺

Steps to make 戚风夹心蛋糕

  • 1.蛋黄蛋白分离,蛋黄中加入葡萄籽油充分搅拌至融合
  • 2.再加入白糖10克搅拌均匀
  • 3.加入酸奶
  • 4.充分搅拌均匀
  • 5.筛入低筋粉搅拌成蛋黄糊
  • 6.蛋白中加入少许柠檬汁
  • 7.打蛋器低速搅打至起大泡时加入20克左右的糖
  • 8.继续低速搅打至泡沫丰富再加20克的糖
  • 9.继续搅打至泡沫细腻加入最后的20克糖然后转高速搅打
  • 10.高速搅打2分钟左右转中速2分钟左右,最后低速搅打至硬性发泡,即提起打蛋器有直直的小三角
  • 11.取1/3的蛋白加入蛋黄糊汇总
  • 12.用翻拌的手法拌均匀
  • 13.把拌好的蛋黄糊倒入剩余的蛋白中
  • 14.依然用翻拌的手法 拌均匀
  • 15.倒入6寸圆模具中
  • 16.烤箱启动,选择蛋糕功能,默认是50分钟,预热到温度时烤箱会有轰鸣声提示
  • 17.放入预热好的烤箱中,配方中的量是2个6寸的量,
  • 18.待程序完成,蛋糕就可以出炉啦。我中途盖了一下锡纸,反倒使得表面上色不够了,建议不用加盖,直接烤效果会更好
  • 19.倒扣晾凉后脱模
  • 20.我不想做太多带奶油的,所以把蛋糕一分为四,取两份,横切成3片,分别在蛋糕片上涂抹山楂酱、打发的淡奶油,最上面挤上一个花型即可
  • 21.最后组合一起即可
