双色糯米烧麦
烧麦(Steamed Pork Dumplings),又称烧卖、肖米、稍麦、稍梅、烧梅、鬼蓬头,是形容顶端蓬松束折如花的形状,是一种以烫面为皮裹馅上笼蒸熟的面食小吃。形如石榴,洁白晶莹,馅多皮薄,清香可口。在中国土生土长,历史相当悠久。在江苏、浙江、广东、广西一带,人们把它叫做烧卖,而在北京等地则将它称为烧麦。喷香可口,兼有小笼包与锅贴之优点,民间常作为宴席佳肴。

    Steps to make 双色糯米烧麦

    • 1.提前一天把糯米用水泡上,泡好的糯米上笼蒸40分钟。
    • 2.香菇、胡萝卜、葱姜、火腿切末待用。
    • 3.肉末加葱姜末、盐、生抽、老抽、鸡精、胡椒粉、十三香搅拌均匀。
    • 4.炒锅热油,放入猪肉馅翻炒一下。
    • 5.再加入香菇、胡萝卜、葱姜、火腿翻炒均匀;加少许调料入味。
    • 6.蒸好的糯米放入炒锅里和已入味的猪肉馅混合,加一些香葱。
    • 7.翻拌均匀待用。
    • 8.将菠菜和胡萝卜切碎,加少许水打成汁。
    • 9.过滤掉碎末后留汁水待用。
    • 10.面粉加蔬菜汁和成面团。
    • 11.醒发一小时。
    • 12.将面团擀成圆形皮(四围薄中间厚的)。
    • 13.包入馅料,整形。
    • 14.整形~~用手指将腰部捏紧,露出一部分出来。
    • 15.上锅大火蒸10分钟即可。
