软兜长鱼,又称软兜黄鳝。是江苏的传统名菜。也是淮扬菜中久负盛名的一道菜肴。家庭操作也很方便。控制好油量和火候,成品鲜滑肉嫩,味道醇厚。

Steps to make 软兜长鱼

  • 1.大蒜切片。
  • 2.鳝鱼去头去骨划开,洗净,开水烫几秒控干。
  • 3.加入料酒,生抽、老抽,糖、盐、黑胡椒,淀粉,盐。
  • 4.拌匀,腌制至少10分钟。
  • 5.锅热倒油,油量参考图示。
  • 6.加入蒜片煸香。
  • 7.倒入鳝鱼
  • 8.大火快速翻炒。
  • 9.2分钟即可关火。
  • 10.出锅前再撒适量黑胡椒和少许热油。肉嫩爽滑,鲜香可口。
