番茄鸡蛋烩面

Steps to make 番茄鸡蛋烩面

  • 1.面粉和水混合,揉成比较硬的面团,饧10分钟,揉一会儿,再饧10分钟,再揉一会儿后,让面团饧20分钟。
  • 2.这时面团揉起来没有那么吃力了,分割成两份。
  • 3.用走锤擀成大薄片。
  • 4.以“S”形叠好面皮。
  • 5.放在砧板上切成细条。
  • 6.再一抖,面条就切好咯!
  • 7.煮一锅水,烧开下面条焯一下,捞出用篓子装好,用冷水冲掉粘液备用。
  • 8.在烧水的时候,可以把番茄、鸡蛋和葱花都准备好:番茄洗净切成小丁,鸡蛋打成蛋液,葱花切好。
  • 9.炒锅放1大勺油,烧热。
  • 10.炒到鸡蛋表面微焦即可出锅备用。
  • 11.再放1大勺食用油,下番茄翻炒。
  • 12.番茄炒出水,变烂后,下鸡蛋。
  • 13.再放适量盐和鸡精翻炒几下就可以关火,再继续的话汤汁会收干,因为我们是要做烩面,所以番茄鸡蛋的汤汁一定要多。
  • 14.再烧一锅水,将焯好水的面条放入。
  • 15.煮开后基本就熟了。
  • 16.捞出锅,浇上番茄鸡蛋,再加少许盐和鸡精即可。虽然前面做番茄炒鸡蛋时已经加了盐和鸡精,但是如果不另外再加点盐和鸡精的话,味道会很淡。
