奶黄包

自己做的奶黄馅,非常的香甜,比外面卖的好多吃了,蒸出的奶黄包,柔柔软软的,非常香甜,光滑细腻惹人喜爱!

  • 蛋黄2个
  • 牛奶35g
  • 黄油20g
  • 白砂糖40g
  • 玉米淀粉15g
  • 低筋粉15g
  • 奶粉20g
  • 白糖5g
  • 中筋粉250g
  • 温水100克
  • 酵母2.5g

Steps to make 奶黄包

  • 1.盆中加蛋黄,奶粉、玉米淀粉、中筋粉,白糖。
  • 2.先加入一少半的牛奶搅拌均匀。
  • 3.再加入剩下的牛奶搅拌均匀,加入软化的黄油搅拌均匀。
  • 4.过筛倒不粘锅里。
  • 5.中小火熬煮,用刮刀不断的搅拌。
  • 6.炒到这种成团的状态。
  • 7.取出晾至不烫手时分成十等份,分别滚圆。
  • 8.面粉中加入酵母,白糖搅搅匀,分次加入牛奶水,搅成絮状。
  • 9.下手反复揉成光滑的面团。
  • 10.平均分成十份,用保鲜膜盖好防止风干。
  • 11.取一个面团翻过来,擀成面皮,包入奶黄馅。
  • 12.像包包子一样包好,捏紧封口。
  • 13.包好滚圆,整理一下形状,都包好后的样子。
  • 14.放入蒸锅中进行发酵,底下可铺油纸或刷点油。
  • 15.发酵到1.5倍大,用手轻轻一碰有弹性,如果能按出小坑就说明发过了,蒸出来表面也会出小坑,水开再蒸,蒸13分钟,再闷2分钟。
  • 16.婴儿肌,水嫩光滑,特别柔软。
