小清新—轻乳酪
轻乳酪蛋糕是我一直很喜欢的一款蛋糕,它比其他的芝士蛋糕整体上清爽很多,吃起来也不腻味。也正如《烘焙宝典》所说的轻柔绵细,入口即化,淡淡的奶酪清香, 连怕奶酪味的人, 也忍不住爱上它。

Details of ingredients

  • 奶油奶酪250g
  • 低筋面粉30g
  • 玉米淀粉40g
  • 酸奶40ml
  • 1g
  • 蛋黄3个
  • 蛋白3个
  • 细砂糖50g加入蛋白

Steps to make 小清新—轻乳酪

  • 1.备好材料。
  • 2.将奶油奶酪隔水软化,用打蛋器搅拌下。
  • 3.然后将碗从水里拿出来,分三次加入蛋黄搅打均匀。
  • 4.分三次加入细砂糖搅打均匀。
  • 5.分三次加入过筛的低筋面粉和玉米淀粉用刮刀翻拌均匀。
  • 6.最后加入盐和酸奶用刮刀翻拌均匀。
  • 7.将搅拌好的奶油奶酪面糊放置在一边备用。
  • 8.把蛋白打发至湿性发泡,既顶端有稍微的弯曲。
  • 9.将1/3的蛋白盛入奶酪面糊中,从下朝上翻拌。
  • 10.将混合好的乳酪面糊,倒入剩余的蛋白中,从下朝上翻拌。
  • 11.活底模子用锡箔纸包起来,将蛋糕糊倒入模子里,在桌上轻磕几下。
  • 12.将模子放入烤盘中,往烤盘内注入适量清水。将烤盘放入烤箱中层烤架,175°烤10分钟。再转160°烤40分钟即可。
