Steps to make 双椒鱼头

  • 1.剁椒、泡椒(切碎)、泡椒水、剁椒腌仔姜片、小香葱(切葱花),另外切几片姜(忘拍照了)
  • 2.流动的纯净水把鱼头里外的血水冲洗干净
  • 3.葱头、葱结、姜片放入碗底
  • 4.把用盐腌过的鱼头放在上面,鱼头上放上姜片和剁椒姜片(各放一边)
  • 5.锅里多放些玉米油烧热,分别倒入切碎的泡椒、剁椒碗里(能让两种辣椒口感脆)(忘拍照了)
  • 6.把剁椒和泡椒分别放鱼头两过,把泡椒水加少许味极鲜调匀均匀的倒在上面(这是自制的蒸鱼豉油)
  • 7.放入蒸锅里上气后,大火蒸7---8分钟(不能蒸超过10分钟,否则蒸老了口感不嫩)
  • 8.出锅时撒上葱花
  • 9.两种辣椒的汤汁拌鱼头一起吃最好吃。
