  • 玉米淀粉16g
  • 玉米油30g
  • 绵白糖50g
  • 牛奶150g
  • 鸡蛋4个
  • 白醋少许
  • 黑芝麻少许

Steps to make 戚风蛋糕卷

  • 1.分离出的蛋黄打在干净的容器里,加牛奶、玉米油搅拌均匀
  • 2.筛入已经过筛过的面粉和玉米淀粉混合后的低筋粉
  • 3.轻轻搅拌均匀看不见干粉,蛋黄糊就做好了
  • 4.蛋白打在无水无油的容器里加几滴白醋,用电动打蛋器打至粗泡时加入1/3的糖
  • 5.继续打至细泡时再加入1/3的糖
  • 6.打至蛋白比较浓稠时加入剩余的糖
  • 7.提起打蛋器蛋白呈稍微弯曲的倒三角,蛋白的打发就完成了
  • 8.取1/3的蛋白霜倒入蛋黄糊中
  • 9.上下切拌翻拌均匀(不要划圈搅拌)
  • 10.然后再重新倒回到余下的蛋白霜里
  • 11.依然是上下切拌翻拌均匀,制成非常细腻的蛋糕糊
  • 12.烤盘铺油纸撒上少许黑芝麻
  • 13.把蛋糕糊倒入烤盘里表面抹平
  • 14.放入提前预热的烤箱
  • 15.150度上下火中层烤30分钟
  • 16.烤制时间结束立即取出蛋糕,撕开四周的油纸
  • 17.借助擀面杖将蛋糕体卷起来,放冰箱冷藏30分钟定型
  • 18.冷藏时间结束取出揭掉油纸切块
  • 19.看看吧内部组织非常细腻
