港式沙茶面
港式沙茶面通常都是南洋风的沙茶面,南洋口味的菜式在香港很红,一般很多南洋菜式现在很多都变成餐厅的常客了。
沙茶酱是可以自制的,而且味道可以和酒店一样美味。
但是今天主要是怎么炒制沙茶面所以暂且不提如何制作酱料。
  沙茶酱非常香,用来炒面简直是绝配。味道香而浓,几十种香料的香气融合为一体的沙茶酱加上鲜美海鲜与韭菜的香气和面完美融合,吃完只会觉得意犹未尽。

    Steps to make 港式沙茶面

    • 1.冷锅冷油,小火加热。
    • 2.放入虾仁,莱氏拟乌贼,小火快炒。
    • 3.表面稍微变色后,再放入肉片拌抄,保持小火。
    • 4.放入杏鲍菇块,葱段炒香。
    • 5.放入沙茶酱,糖翻炒均匀,糖融化。
    • 6.加入适量豉油,沿着热锅边转圈加入,这样可以增加豉油香气并且容易翻炒均匀。
    • 7.将豉油和食材充分炒均匀后,加入水。
    • 8.加入水后拌匀,然后加入面(不要把顺序弄错了,先加水煮滚,然后加面,顺序弄错影响口感)。
    • 9.面搅匀之后倒入韭菜。
    • 10.韭菜和面拌匀,韭菜香气四溢后关火,均匀撒上黑白胡椒拌抄,沙茶面就好了。
