黑麦酸奶餐包
最近一直不断地在做黑麦或者全麦面包,老公更喜欢这黑麦面包,一直说这面包有浓浓的麦香味,而这种麦香味已经离我们很久很久。黑麦含有很高的膳食纤维,为了弥补黑麦粉做出面包缺乏筋道和弹性,所以加入了一半的高筋面粉中和,用自制的酸奶和面,加了一些果干使得面包大大提升了风味。

  • 高粉面粉150克
  • 老面100克
  • 酸奶150克
  • 白糖18克
  • 酵母3克
  • 3克
  • 黄油18克
  • 鸡蛋50克
  • 葡萄干20克

Steps to make 黑麦酸奶餐包

  • 1.准备好所有食材
  • 2.面包桶内依次加入酸奶,鸡蛋,白糖,盐,撕入老面后加入黑麦粉和高筋面粉中间埋人酵母
  • 3.按和面20分钟后加入黄油
  • 4.再按和面20分钟出膜
  • 5.调到发酵程序
  • 6.发酵至2倍多
  • 7.取出排气留起100克做老面余下的分成8等分,盖上保鲜膜静置15分钟了
  • 8.再一次滚圆后擀成长条加入葡萄干
  • 9.从上往下卷起放入模具里至全部做好放入模具内
  • 10.放入烤箱二发,烤盘下面放一盆热水
  • 11.发酵至2倍大刷上蛋液,撒上杏仁片,烤箱180度预热
  • 12.放入预热好的烤箱内,倒数第二层烤18分钟即可出炉
  • 13.刚出炉的面包表皮是脆的,待凉透后会回软。
