  • 清水(中种面团)170g
  • 清水(主面团)70g

Steps to make 抹茶红豆面包卷

  • 1.中种面团和好后,放冰箱冷藏发酵一个晚上。
  • 2.主面团的原料准备。
  • 3.中种面团切块,与面包粉、白糖、抹茶粉、清水、奶粉一起放入厨师机中,揉面。
  • 4.面粉成团时,加入盐,继续和面。
  • 5.面团光滑细腻时,加入橄榄油继续和面。
  • 6.面团光滑可以拉出结实的薄膜时,整理面团放盆中室温发酵2倍大。
  • 7.面团排气,均分为40克的小面团,揉圆静置几分钟。
  • 8.取一个小面团擀成成长方形。
  • 9.翻面后铺上红豆馅,卷起来。
  • 10.将面团切两半,再将面团切两半,一共是4份。
  • 11.放入长方形的模具中。
  • 12.发酵1.5倍大小,烤箱上下火180度预热后,模具放入烤箱,烤15分钟,表面上色均匀,取出晾凉。
  • 13.非常好吃的抹茶红豆卷。
