豆沙蛋黄月饼
中秋佳节,月饼是必不可少的应景美食。提前制作一款豆沙蛋黄月饼预热中秋吧。

Steps to make 豆沙蛋黄月饼

  • 1.75克转化糖浆中加入1克枧水搅拌均匀,再加入25克色拉油搅拌均匀。
  • 2.加入中筋面粉100克、奶粉5克混合。
  • 3.搅拌均匀成团,放置冰箱冷藏2-3小时。面团总重量200克左右,可做月饼10个。
  • 4.准备好咸蛋黄,每个蛋黄重量15克左右。
  • 5.准备好自制红豆沙。
  • 6.称取重量15克左右的红豆沙按扁包住一颗蛋黄,总重量30克左右。
  • 7.将面团分成10个20克左右的小面团。
  • 8.取以一个面团按扁,放一颗豆沙蛋黄馅。
  • 9.放在手掌虎口处,把饼皮慢慢向上推,直至饼皮完全包住馅料。
  • 10.放在面粉中滚一下,再放手心搓搓,放入50克的月饼模具中。
  • 11.直接在铺好锡纸的烤盘上压出花型。
  • 12.做好所有,摆在烤盘上空开距离。在月饼表面薄薄喷一层水。
  • 13.烤箱180度预热,烤盘放置中层,上下火烤5分钟左右,月饼花纹定型,取出均匀刷一层薄薄的蛋黄液。
  • 14.继续烤20分钟左右至月饼表面金黄。刚烤好的月饼表面干硬。
  • 15.烤好的月饼彻底放凉,等待回油。1-2天月饼柔软表面油亮,即可。
