    Steps to make 咸干菜扣肉

    • 1.五花肉清理干净去掉杂毛。
    • 2.锅中加入适量清水放入几粒花椒。
    • 3.放入五花肉煮到没有血水。
    • 4.捞出控水尽量把表皮的水分擦拭干净。
    • 5.在表皮上抹上老抽等几分钟上色。
    • 6.在轻轻擦上一层米酒,这个是表皮起皱的关键,没有也可以省略。
    • 7.入油锅中炸至金黄。
    • 8.取出肉皮那一面过一下凉水。
    • 9.这样做出来的表皮颜色十分漂亮。
    • 10.放凉切片。
    • 11.放入适量盐,生抽,老抽,少许白糖和十三香。
    • 12.拌匀腌至片刻。
    • 13.咸干菜多清洗几遍,去掉多余的盐分。
    • 14.使劲儿捏干水分,姜蒜小米辣切末。
    • 15.把腌制好的肉片肉皮朝向碗底摆好。
    • 16.锅中放入适量油烧到六成热,放入姜,蒜,小米辣,花椒炒出香味儿。
    • 17.放入咸干菜翻炒片刻,调入适量鸡粉和生抽炒均匀关火。
    • 18.把炒好的咸干菜放在肉片上面。
    • 19.电压锅中一个小时。
    • 20.取出用盘子倒扣过来即可。
    • 21.现在很流行的一种吃法配上荷叶夹,好吃肥而不腻!
