自制酸豆角
炎炎夏日,没有胃口,酸豆角酸辣开胃,简直太爱了!!
自己做的酸豆角干净卫生,最喜欢炒肉沫吃,米饭都多吃两碗呢!!

  • 淘米水(第一遍)1000g
  • 蒜头25g
  • 25g
  • 小米辣50g
  • 食用盐150g
  • 冰糖50g

Steps to make 自制酸豆角

  • 1.豆角摘掉头尾尖尖的豆角头,把有虫眼的挑选出来,蒜头、姜片、小米辣,全部食材清洗干净晾干水分,我直接放太阳底下晾晒,30℃的高温晒半个小时就干了。
  • 2.玻璃罐清洗干净后,用蒸汽消毒(也可以用烤箱,100℃不用预热,烤10分钟即可),再晾干水分,把豆角放进去。
  • 3.加入姜片,蒜瓣,小米辣。
  • 4.加入盐和冰糖(这里我用的是粗盐,随意就可以了哈),有点满了,呆会加入淘米水会沉下去的哈。
  • 5.加入淘洗第一遍的淘米水,没过玻璃罐里的食材即可,这里大概用了1000g。
  • 6.盖上盖子,阴凉处发酵3天即可开吃。
  • 7.这是我腌了半个月的酸豆角。
