超级美味肉夹馍

  • 五花肉1000g
  • 面粉600g
  • 生抽2勺
  • 蚝油1勺
  • 冰糖3颗
  • 酵母8g
  • 老抽4勺
  • 320g
  • 八角2颗
  • 草果1颗
  • 香叶2片

Steps to make 超级美味肉夹馍

  • 1.320g温水加8g酵母搅拌均匀
  • 2.称出600g面粉
  • 3.将酵母水加入面粉中用筷子搅拌成絮状
  • 4.然后用水揉至均匀光滑的面团
  • 5.因为今天我们这只有13度,就温了点水将面团放进盖上盖子发酵1个小时左右,如果天气热可以直接室温发酵
  • 6.发酵的时间可以准备五花肉,将其切方块,大小如图所示
  • 7.五花肉冷水下锅,撒入一把花椒,加一勺料酒
  • 8.沸水煮约五分钟,同时要不断翻面至五花肉变白捞出用冷水洗净备用
  • 9.将五花肉码入锅中放入葱姜
  • 10.调汁:2勺生抽、4勺老抽、1勺料酒、1勺蚝油、3颗冰糖搅拌均匀,勺子大小如图所示
  • 11.将碗汁浇在五花肉上
  • 12.加水没过五花肉,撒入八角、桂皮、香叶、草果,大火煮开
  • 13.之后转入电饭锅炖煮一个半小时,这步也可省略,直接在锅中小火炖制
  • 14.因为我的电饭锅小,还剩了点汤汁,就放了点鸡蛋和素鸡
  • 15.一个小时之后面团发酵成原来的两倍大,手指粘面粉戳个窟窿不回弹,面粉也不回缩就可以了,图片是我把保鲜膜揭掉之后的样子(还是不盖保鲜膜最好)
  • 16.将面团取出揉至均匀光滑的面团
  • 17.揉成长条
  • 18.切成大小均匀的15份小块
  • 19.拿出一小块揉至均匀,用擀面杖擀开折叠
  • 20.用手将其卷起
  • 21.重复上述步骤,盖上保鲜膜醒制10分钟
  • 22.醒制完成,取出面团按扁
  • 23.将其稍微擀开
  • 24.码入电饼铛盖上盖子烙制五分钟左右至两面金黄
  • 25.成品
  • 26.饼烙好的同时肉也炖的差不多了
  • 27.将肉加入青椒剁碎,边剁边加一勺肉汤
  • 28.用刀割开饼
  • 29.将肉加进去,也可以再加一勺肉汤
  • 30.成品
