【卤猪头肉】
过年期间,家里总少不了做些卤味,想起每年都是妈妈做的,这次自己提议要尝试卤猪耳朵之类的,真要做起来还确实没什么经验,现在才发觉自己有太多第一次需要尝试,这样才能不断的进步!卤完还可以蘸料吃,味道更加丰富!

Steps to make 【卤猪头肉】

  • 1.去毛洗净处理好的猪耳朵猪尾巴猪鼻子。
  • 2.生姜,辣椒干,香叶,桂皮,八角,花椒,丁香。
  • 3.剪一小块纱布,把辣椒干剪碎,加上花椒,丁香包入。
  • 4.绑紧纱布,生姜等大块的香料不用包入。
  • 5.锅中加适量水,下入所有香料煮开。
  • 6.下入七汤匙的老抽,上色情况可以根据个人喜好增减,再加五小勺的盐,稍微咸一点猪头肉才会入味,期间尝一下判断味道。
  • 7.下入猪头肉开始煮。
  • 8.煮至上色,猪头肉用筷子能穿过即可,放适量鸡精,继续浸泡几小时,冷却入味后切开即可食用。
