【徽菜】――“银鱼干煎蛋”
“银鱼干煎蛋”是徽菜中因地取材的一道代表菜,原料选自当地的淡水银鱼。做法也十分简单,就和普通的煎蛋做法一样。
“银鱼煎蛋”通常都使用鲜的银鱼,但我感觉腥气太大,因此改用银鱼干来制作,先把银鱼干炒成干鱼酥,然后放入蛋液里再开始煎制,这样吃起来很香,主要做法如下;

Steps to make 【徽菜】――“银鱼干煎蛋”

  • 1.鸡蛋里放入味精、盐、胡椒粉和绍酒调味去腥。
  • 2.把银鱼干用少许油煎炸。
  • 3.把银鱼干煎香后稍晾,然后倒入蛋液里搅匀。
  • 4.炒勺上火烧热注入少许油,倒入蛋液开始煎制。
  • 5.把蛋液煎至底部定型后,撒入香葱末少许,然后翻勺稍煎即可。
  • 6.煎好后用锅铲在锅中把煎好的鸡蛋分割成三角形,然后出锅码盘即可。
